Here are just a few things I've eaten over the past week and a half.
Homemade chicken and vegetable soup. One day for lunch it was along side of a grilled turkey and spinach wrap. Nom!
Breakfast might be my favorite meal. I love eggs cooked just about any which way. Does anyone else drool when they look at these hard boiled eggs with ground peppercorn? It can't be just me.
This is a large dinner plate holding 2 eggs, 1 cup of egg whites, a cup of spinach (raw-- it shrinks down when cooked, obviously), a whole apple sliced, and a rice cake slathered in peanut butter. GET IN MY BELLY!
Don't underestimate the deliciousness of a good salad. This first one is a restaurant salad from Gondolier. Grilled salmon on top of what is supposed to be a Greek salad (minus the olives).
This is one that I made at home after being inspired by a salad I saw Autumn Calabrese make in a Fixate video. It's dark greens, cucumber, red peppers, whole wheat pasta, pineapple, and pecans. The idea of putting a serving of pasta IN my salad is, like, life-changing.
This is one of my old-school favorite Body for Life recipes. Turkey Sesame Stir Fry. So easy, so good, so healthy!
On day 2 of this stir fry, it was a little low on turkey, so I added a couple of over-easy eggs to the mix. I don't know why this worked, but it did.
Finally, Superbowl snacks, anyone? Making these sweet potato skins and this chicken ranch dip for veggies made me feel like a rockstar in the kitchen, and I am anything *but* a rockstar in the kitchen.
Eating well takes a little more thought and a little more preparation, but it is rewarding and worth it in so many ways.
